George Wood on Building Bar George and Georgie's from Scratch

The 23-year-old owner of Bar George and Georgie's Garden Cafe explains how dropping out of high school for pro golf led him to Sarasota's University Town Center.

George Wood · Owner of Bar George & Georgie's

George Wood was a sophomore in high school with a plus handicap and a father who ran restaurants. When the golf dream faded around age 17, that background became the plan. Wood dropped out, worked toward opening his own place, and by 23 was running Georgie's Garden Cafe and Bar George in Sarasota's University Town Center district, with a downtown concept already in the works.

The origin story is a family negotiation as much as a business plan. Wood asked his father for a million dollars to get started; his father agreed, on the condition that Wood prove he could build something that worked. Construction on the UTC space did not start until January 2021, after COVID delays pushed the original June 2020 opening back by months. Landlord Benderson worked with Wood so rent did not start until the doors opened, a break he says saved the business early on, even as a brand-new company with no loss history to show, it did not qualify for pandemic relief programs like PPP.

From breakfast spot to nightlife brand

What began as a single daytime restaurant, Georgie's Garden Cafe, expanded when a neighboring tenant backed out, and Wood pitched his father on adding a bar and nightclub next door: Bar George. The two spaces now run on different clocks, a polished-but-approachable restaurant by day and a bottle-service nightlife spot on Thursday through Sunday nights, complete with a monthly supercar social that draws exotics worth a quarter million dollars and up.

The next move is downtown

Wood confirmed on the show, for the first time publicly, that his restaurant group is planning a downtown Sarasota location: a casual steakhouse built around a club-style bar, with a DJ booth positioned above the room so the whole space can shift from dinner service to a late-night scene. His stated goal is ambitious for a 23-year-old operator, chasing a James Beard or Michelin nod for the concept, an achievement he says would let him expand the brand into Tampa, Orlando and eventually Miami.

What you'll take away

  • Wood dropped out of high school at 15 to chase professional golf before pivoting to the restaurant business his father had already built experience in
  • Bar George and Georgie's Garden Cafe are being deliberately rebranded, with a higher-end but approachable menu rolling out by mid-June and a full rebrand planned for October
  • As a new business, the company was ineligible for PPP or pandemic grants despite a rent deferral agreement with landlord Benderson that helped it survive construction delays
  • A downtown Sarasota location is confirmed and in planning, combining a casual steakhouse with an elevated DJ booth so the space can transition from dinner to nightlife
  • Wood's long-term goal is a Michelin or James Beard-caliber concept that could expand the brand into Tampa, Orlando and Miami
